The course continues with a variety of meats including beef tongue seasoned with salt, Yamanashi Shingen chicken thigh, Kuroge wagyu harami, and Omugi beef loin. It also features Joshu pork chateaubriand from Gunma prefecture and a rare A5 rank part of Kuroge wagyu beef, seared for just three seconds. The course concludes with tripe served in a special Japanese soup stock, exciting uni meat, an A5 rank sirloin grill, and the ultimate finish - an Azabu bowl.The second option (option 2) is the 'Special Course', which also starts with two kinds of appetisers and seared meat sushi with caviar. This course focuses on Kuroge wagyu with premium kalbi, rump, harami, and ichibo cuts. Similar to the Ultimate Course, it includes a rare A5 rank part of Kuroge wagyu beef, seared for three seconds. The meal concludes with tripe in special Japanese soup stock, A5 rank sirloin prepared as grilled shabu-shabu and suki-yaki, and a final bite of curry.Lastly, the 'Chef's Recommended Course' (option 3) offers two appetisers, seared meat sushi with caviar, and salted beef tongue.
