Historically Rajasthan’s cuisine evolved from its need to reduce the amount of water used for cooking. Given the harsh desert terrain, foods that delivered high nutritional value, which could be stored for long periods of time, and which used locally available ingredients emerged. Rajasthani cooking is largely vegetarian, but meals are not dominated by vegetables. Instead, milk, buttermilk and other milk products are used widely in the cuisine, so are various lentils and grains.
